A note from George Markos, Chef and Restaurateur
When I was a boy I used to buy books in a village store about a cowboy. I would read these and would dream about how I would discover the world for myself. I loved my parents and my family but I wanted to explore on my own. I wanted independence and adventure. I wanted to work.
With my brother, I left my homeland of Souther Greece and came to this country. I was 15 years old. I stayed with my uncle. When I was 16 years old, my brother went back home and got married. I was on my own in Colorado.
My first job was at Big Ben’s. They were the nicest people and they treated me like family. I learned so much. Things like mustard, ketchup, pickles, relish were all new to me. I finally tried mustard two years ago. :)
Everyday I get up in 4:30 in the morning. Everyday I wake up and wonder what beauty I will gain today. I love my restaurant because of the people. I see the good in everyone. Each person has a story.
My food and my recipes are my story.
Brothers Deli in Lynn is a family and you are a part of it. Just like in the old country, the door is always open, the food is always plentiful, and there is a place at the table for you.
